Rocky Road Cheesecake


  • 3 squares semi sweet baking chocolate
  • 16 oz cream cheese, softened
  • 1/3 cup sugar
  • 1/4 cup milk
  • 2 cups whipped topping
  • 3/4 cup mini marshmallows
  • 1/3 cup chopped cocktail peanuts
  • 1 chocolate pie crust


  • In double boiler, melt 1 square chocolate, set aside
  • In bowl, beat cream cheese, sugar and milk on medium until well blended
  • Add melted chocolate, mix well
  • Gently stir in whipped topping (already whipped), marshmallows and peanuts
  • Coarsely chop remaining chocolate and stir into cream cheese
  • Spoon into crust
  • Refrigerate for 4 hours or until set
