Roasted Peppers

Ingredients:

  • 4 peppersof various colors
  • 12 garlic cloves, whole
  • 2 tbsp olive oil

Directions:

  • Preheat ovent o 400
  • Line shallow pan with parchment paper
  • Cut peppers into strips and place in pan with garlic and olive oil
  • Roast pepper until edges are blackened and garlic is tender, about 15-20 minutes

Jewel Toned Orzo

Ingredients:

  • 2 tbsp margarine or olive oil
  • large onions, diced
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • 8 oz mushroom, sliced
  •  ½ cup craisins
  • ¼ tsp salt
  • 1/8 tsp white pepper
  • 1 tbsp oil
  • 16 oz orzo
  • 1½ tsp chicken bouillon powder

Directions:

  • Melt margarine in a large pan over medium heat
  • Add onions, peppers, mushrooms and craisins and sauté until soft, 6-8 minutes, making sure veggies don’t brown or burn
  • Add salt and pepper
  • Meanwhile, in a medium pot, heat oil. Add orzo and toast until golden, stirring often
  • Add boiling water, to cover by a few inches, and bouillon powder
  • Cook for 8-9 minutes, if water boils out and orzo is still hard, add more hot water, ½ C at a time. Stir to make sure orzo doesn’t stick to the pot
  • Combine the veggies with orzo. Serve hot.

Roasted Vegetables

Ingredients

  • Red pepper
  • Yellow pepper
  • Zucchini
  • Onion
  • Portabello mushroom
  • 1.5 cup olive oil
  • 1 tsp thyme
  • 1 tsp basil
  • 2 tsp minced garlic
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper

Directions:

  • Chop vegetables
  • Mix dressing and toss with vegetables
  • Bake at 375 for 20 min

Sesame Linguini

Ingredients:

  • 1 lb linguine noodles
  • 6 tbsp soy sauce
  • 6 tbsp rice vinegar
  • 6 tbsp sugar
  • 6 cloves garlic (crushed)
  • 2 tbsp toasted sesame oil
  • 1-2 tsp crushed hot pepper flakes
  • 3 scallions
  • Pinch of sesame seed
Directions:
  • Cook the linguine
  • Cook rest of the ingredients, besides scallions and sesame seeds, in a pot on medium and bring to a boil
  • Pour sauce over the noodles
  • Garnish with sesame seeds and scallions

 

Butternut Pie

Ingredients:

  • Butternut
  • 1/4 tsp cinnamon
  • 1 tsp vanilla extract
  • 4 eggs
  • Frozen pie crust

Directions:

  • Cook butternut until soft
  • Add rest of ingredients and mash together until smooth
  • Place into pie crust
  • Bake at 350 for 45 min

Sweet Lokshin Kugel

Ingredients:

  • 1 stick margarine
  • 4.5 cups water
  • 1 cup sugar
  • 1 tsp salt
  • Less than a tsp pepper
  • 12 oz thin noodles
  • 2 eggs
  • 4 tbsp brown sugar
  • 3 tbsp oil

Directions:

  • Boil first 5 ingredients besides noodles
  • Add noodles and let stand 12-15 minutes
  • Add eggs, brown sugar and oil and let stand 10-15 minutes
  • Pour into 9×13 pand and bake at 350 for 1 hour

Herbed Pasta-Tuna Bake

Ingredients:

  •  8 oz. (2 c.) macaroni shells, cooked and drained
  •  2 (6 1/2 oz.) cans tuna, drained and chunked
  •  1/2 c. chopped celery
  •  1/2 c. mayonnaise
  •  1/2 c. milk
  •  3 c. loosely packed parsley (1 bunch), thick stems removed
  •  2/3 c. coarsely chopped green onions

Directions:

  • In greased deep 2-quart baking dish toss shells, tuna and celery
  • In blender or food processor process mayonnaise, milk, parsley and green onions until smooth
  • Pour over tuna mixture; toss to coat
  • Bake in preheated 400 degree oven 15 minutes or until bubbly

 

Angel Hair Pasta with Pepper Salad

Ingredients:

  • 1 box angel hair pasta
  • 1 red pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • 1 green pepper, thinly sliced

Dressing:

  • 1/2 cup soy sauce
  • 1/2 cup oil
  • 1/4 cup sugar
  • 1 clove garlic

Carrot Muffins

Ingredients:

  • 1 cup sugar
  • 1 cup all-purpose flour
  • 3/4 cup canola oil
  • 12 ounces baby food carrots (usually 3 jars)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 large eggs

Directions:

  • Place the sugar, flour and oil into a medium mixing bowl. Add the baby food carrots
  • Add the baking soda, cinnamon and eggs. Mix at medium speed for three minutes, until the batter is smooth
  • Place the paper muffin cups into a muffin or cupcake tray. Fill the muffin cups almost to the top
  • Place the tray into the oven and bake for 30 minutes, until toothpick stuck inside comes out clean
  • Makes 12-14 muffins.

Broccoli Kugel

Ingredients:

  • 1 bag frozen broccoli pieces (I use florets)
  • 3 eggs
  • 3 Tbsp flour
  • 3 Tbsp soup mix
  • 3 Tbsp Mayo
  • 1/4 C oil

Directions:

  • Mix all ing and pour into round size pan
  • Sprinkle with corn flake crumbs
  • Bake @ 350 for 1 hour
