Ingredients:
- 1 package Portobello mushrooms, sliced
- 2 zucchinis, unpeeled and cut in half circles
- 1 red pepper, cut in thin strips
- 1 yellow/orange pepper, cut in thin strips
- ½ cup oil
- 2 tbsp soy sauce
Broil on 500 for 30 min
- 2 cups quinoa cooked
- 1 tbsp sugar
- 2 minced garlic
- 4 tbsp vinegar
- 2 tbsp mustard
- 2 tbsp parsley flakes
- Salt to taste
Dress the quinoa right away and keep it separate from the grilled veggies until you are ready to serve it.
Scoop out the veggies onto the quinoa so the liquid of the veggies doesn’t sog the quinoa.
