Pomegranate Salad


Ingredients:

  • 1 1/4 lb spinach
  • 1 cup hearts of palm, sliced
  • 1 cup corn
  • 1 cup pomegranate seeds

Dressing:

  • 1/2 cup mild extra virgin olive oil
  • 4 tbsp lemon juice
  • 1/4 cup pomegranate juice
  • salt and pepper to taste
