Ingredients:
- 4 ripe tomatoes, roughly chopped
- 1 green pepper, halved and seeded
- 1/2 cup onion
- 5 cloves garlic
- 1/4 cup oil
- 1/2 tbsp salt
- pinch red pepper flakes
- 1 tbsp tomato paste
Directions:
- Preheat oven to 425
- Mix all ingredients, besides tomato paste, in pan
- Roast for 25 minutes or until you see that the vegetables have clearly been roasted well
- Place in food processor with tomato paste (or use hand held blender), pulse until chunky
