Zucchini Muffins


Ingredients:
  • 3 eggs
  • 1 cup oil (or 1/2 cup oil and 1/2 cup unsweetened apple sauce)
  • 1 1/2 cup sugar
  • 3 cups grated and drained zucchini (3 large)
  • 3 tsp. vanilla extract
  • 2 cups flour
  • 1 3/4 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. baking powder
Directions:
  • Mix eggs, oil, sugar, zucchini and vanilla extract by hand
  • Combine the dry ingredients in a separate bowl
  • Add dry ingredients to the wet mixture of zucchini
  • Fill muffin tins almost to the top.
  • Bake at 350 for 45 minutes.
