Ingredients:
- 4 medium sweet potatoes
- 4 eggs
- 1/3 cup oil
- 1/4 cup sugar
- 1/2 tsp salt
- Crushed nuts with sugar to top
Instructions:
- Preheat oven to 425°.
- Peel, boil, drain and process sweet potatoes in processor until smooth.
- Mix in next 4 ingredients.
- Place in 9×13 pan and add crushed nuts mixture.
- Bake for 20 minutes on 425° and then another hour on 275°.
Yield: 1 pan
