Ingredients
- 1 Stick Margarine
- 1 Cup Confectioners’ Sugar
- 12oz Chocolate Chips
- 1 Tsp Vanilla
- 2 Eggs
- 3/4 Tsp Mint Extract
- 1 Pie Crust
Instructions
- Cream margarine and confectioners’ sugar
- Melt chocolate chips in double boiler and add to margarine mixture
- Add 1 egg at a time
- Add vanilla and mint
- Spread into pie crust, thickens quickly so must be worked with immediately
- Regrigerate to set (freezes well)
