Chocolate Mint Cake

Cake layer

Ingredients:

  • 1 C flour
  • ½ C margarine
  • 1 C sugar
  • 4 eggs
  • 1½ C chocolate syrup

Instructions:

In a large mixing bowl beat flour, sugar, margarine, eggs and syrup until smooth.
Pour into a 9×13 pan.
Bake for 25 to 30 minutes or until top springs back when lightly touched. (Top may still appear wet.) Cool completely in pan.

Mint Cream Layer

Ingredients:

  • 2 C confectioners’ sugar
  • ½ C margarine
  • 1 T water
  • ½ t mint extract
  • 3 drops green food color

Instructions:

In small bowl combine all ingredients, beat until smooth.
Spread over cooled cake. Freeze.

Chocolate Topping

Ingredients:

  • 1 C chocolate chips
  • 6 T margarine

Instructions:

In a small micro-proof bowl melt chips and margarine just until chips are melted and mixture is smooth when stirred. Pour over mint cream. Chill.
