Pomegranate Salad

Ingredients:

  • 1 1/4 lb spinach
  • 1 cup hearts of palm, sliced
  • 1 cup corn
  • 1 cup pomegranate seeds

Dressing:

  • 1/2 cup mild extra virgin olive oil
  • 4 tbsp lemon juice
  • 1/4 cup pomegranate juice
  • salt and pepper to taste

Green Beans with Honey Mustard Dressing

Ingredients:

  • 1 lb green beans
  • 2 mangos or 3 peaches cubed
  • 1/2 cup pine nuts
  • 3/4 cup fresh basil leaves
  • 1/4 cup mustard
  • 1/4 cup honey
  • 1/4 cup lemon juice
  • 2 garlic cloves
  • 1/3 cup oil

 

Directions:

  • Place green beans in a pot of boiling water for about a minute and quickly drain and then let cool
  • Blend basil, mustard, honey, lemon juice, garlic cloves and oil
  • Dressing can be refrigerated until ready to use
  • Place cooled green beans, mangos/peaches in a bowl, pour dressing on top and sprinkle with nuts
