Suganiyot

Ingredients:

  • 2 pckg yeast
  • 1/3 cup sugar
  • 3/4 cup water
  • 1/4 cup orange juice
  • 1/3 cup margarine
  • 1/2 tsp salt
  • 4 or 5 cups flour
  • 3 egg yolks
  • Jelly
  • Powdered sugar

Directions:

  • Mix water, sugar, juice and yeast
  • Let stand 10 minutes
  • Melt margarine and add to yeast mixture
  • Beat in eggs and salt
  • Add flour, mixing and kneading to form a soft dough
  • Let rise 1 1/2 hours
  • Roll dough 1/4 inch thick and cut into 2 inch circles
  • Let circles rise for a half hour
  • Deep fry at 400 degrees about 3 minutes, turning once
  • Pipe in jell and roll in powdered sugar

Apple Latkes

Ingredients:

  • 2 eggs, well beaten
  • 1 1/2 cups orange juice, yogurt or milk
  • 2 cups flour
  • 1 tsp baking powder
  • dash of salt
  • 1/4-1/2 cup sugar
  • 3 med apples, peeled and coarsely grated
  • oil for frying
  • confectioner’s sugar

Directions:

  • Mix eggs with juice
  • Combine flour, baking powder, salt and sugar and add to egg mixture
  • Add grated apples and mix well
  • Drop 1 large tbsp of batter into hot oil and cook for about 2 min on each side, until slightly golden
  • Sprink with confectioner’s sugar
  • Makes approx 36

Honey Apple Cake

Ingredients:

  • 3 1/4 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 2 med apples, peeled and cut in chunks
  • 4 eggs
  • 1 cup sugar
  • 1/2 cup oil
  • 1 cup honey
  • 3/4 cup cold tea
  • 1/4 cup brandy (or orange juice)

Directions:

  • Preheat oven to 325
  • Using food processor
  • Process flour, baking powder, baking soda, cinnamon and ginger for 10 seconds, until blended
  • Process apples until finely minced, 8-10 seconds. Set aside 1 cup firmly packed
  • Process eggs, sugar, oil and honey for 2-3 minutes until light
  • Add dry ingredients, alternately with tea and brandy. ┬áProcess with quick pulses, until blended
  • Add apples with quick pulses, just until mixed
  • Bake in bundt pan for 1 hour and 10 min.

Baked Chicken with Honey Soy Sauce

Ingredients:

  • 2 3lb chickens, quartered
  • 1/3 cup honey
  • 3 tbsp mustard
  • 3 tbsp soy sauce

Variation

  • 1 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 3 tsp garlic
  • 2 tbsp digon mustard
  • salt and pepper to taste
  • sesame seeds (to cover chicken after above is poured on)

Directions:

  • Combine all ingredients and brush chicken
  • Bake uncovered for 1 1/4 to 1 1/2 hours
