Vegetable Quiche


Ingredients:

  • 2 pie crusts
  • 1 green pepper
  • 1 red pepper
  • 2-8 oz. cans mushrooms
  • 2 med. onions
  • 8 oz shredded cheese
  • 1 C. whipped topping
  • 4 eggs
  • 1 tsp salt

Directions:

  • Dice onions and peppers and saute, adding mushrooms
  • Remove from flame and add whipped topping, eggs and salt
  • Pour half of vegetable mixture into crust, adding 1/2 the grated cheese
  • Pour remaining mixture, sprinkling cheese on top
  • Bake at 350° for 1 hour
