Garlic Pea Soup


  • 1 sweet Maui onion, chopped
  • 1 clove garlic, crushed
  • 1 large zucchini, peeled and chopped
  • 2 large carrots, peeled and chopped
  • 4 cups frozen peas
  • 5 cups chicken stock or water
  • 2 Tbsp. canola oil
  • salt and pepper to taste


  • In a soup pot, fry the onion & garlic in oil for 2-3 minutes
  • Add zucchini & carrots & cook an additional 4-5 minutes
  • Stir in the  peas & cover the pot for 4-5 minutes
  • Pour in the stock and bring soup to a boil.
  • Cover pot and cook soup for 5-6 minutes on medium low  until all vegetables  are  tender.
  • With a hand blender, blend soup until smooth.
  • Add salt and pepper and heat through gently for 30 minutes.
