Ingredients:
- 1 sweet Maui onion, chopped
- 1 clove garlic, crushed
- 1 large zucchini, peeled and chopped
- 2 large carrots, peeled and chopped
- 4 cups frozen peas
- 5 cups chicken stock or water
- 2 Tbsp. canola oil
- salt and pepper to taste
Directions:
- In a soup pot, fry the onion & garlic in oil for 2-3 minutes
- Add zucchini & carrots & cook an additional 4-5 minutes
- Stir in the peas & cover the pot for 4-5 minutes
- Pour in the stock and bring soup to a boil.
- Cover pot and cook soup for 5-6 minutes on medium low until all vegetables are tender.
- With a hand blender, blend soup until smooth.
- Add salt and pepper and heat through gently for 30 minutes.
