Penne a la Vodka


Ingredients:

  • 16 oz penne
  • 5 tbsp butter
  • 1 small onion, minced
  • 2 large cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes
  • 1/2 cup vodka
  • 28 oz can plum tomatoes, crushed and undrained
  • 1 cup heavy whipping cream
  • 1 tsp salt
  • 1 cup grated parmesan cheese
  • Pepper

Directions:

  • Cook pasta until al dente, drain and place in a bowl
  • Heat butter over medium heat. Add onion, garlic and crushed red pepper flakes. Saute for 3 minutes
  • Stir in vodka and simmer for 5 minutes
  • Add tomatoes. Simmer for 15 minutes, stirring occasionally, or until liquid evaporates
  • Stir in cream and salt. Simmer for 10 minutes, stirring frequently
  • Add parmesan cheese, mixing well. Season with pepper to taste
  • Pour sauce over pasta, tossing to coat. Serve warm.
