Ingredients:
- 16 oz penne
- 5 tbsp butter
- 1 small onion, minced
- 2 large cloves garlic, minced
- 1/2 tsp crushed red pepper flakes
- 1/2 cup vodka
- 28 oz can plum tomatoes, crushed and undrained
- 1 cup heavy whipping cream
- 1 tsp salt
- 1 cup grated parmesan cheese
- Pepper
Directions:
- Cook pasta until al dente, drain and place in a bowl
- Heat butter over medium heat. Add onion, garlic and crushed red pepper flakes. Saute for 3 minutes
- Stir in vodka and simmer for 5 minutes
- Add tomatoes. Simmer for 15 minutes, stirring occasionally, or until liquid evaporates
- Stir in cream and salt. Simmer for 10 minutes, stirring frequently
- Add parmesan cheese, mixing well. Season with pepper to taste
- Pour sauce over pasta, tossing to coat. Serve warm.
