Tomato Dip


Ingredients:

  • 4 ripe tomatoes, roughly chopped
  • 1 green pepper, halved and seeded
  • 1/2 cup onion
  • 5 cloves garlic
  • 1/4 cup oil
  • 1/2 tbsp salt
  • pinch red pepper flakes
  • 1 tbsp tomato paste

Directions:

  • Preheat oven to 425
  • Mix all ingredients, besides tomato paste, in pan
  • Roast for 25 minutes or until you see that the vegetables have clearly been roasted well
  • Place in food processor with tomato paste (or use hand held blender), pulse until chunky
