Sesame Linguini

Ingredients:

  • 1 lb linguine noodles
  • 6 tbsp soy sauce
  • 6 tbsp rice vinegar
  • 6 tbsp sugar
  • 6 cloves garlic (crushed)
  • 2 tbsp toasted sesame oil
  • 1-2 tsp crushed hot pepper flakes
  • 3 scallions
  • Pinch of sesame seed
Directions:
  • Cook the linguine
  • Cook rest of the ingredients, besides scallions and sesame seeds, in a pot on medium and bring to a boil
  • Pour sauce over the noodles
  • Garnish with sesame seeds and scallions

 

Broccoli Slaw

Ingredients:

  • Broccoli slaw
  • Craisins
  • Honey glazed almonds

Dressing:

  • 1 1/2 tablespoons vegetable or grapeseed oil
  • 6 tablespoons seasoned rice vinegar
  • 1 teaspoon sesame oil (add more to taste if you prefer a strong sesame taste)
  • 1 1/2 teaspoons sugar
  • 2 teaspoons light soy sauce
  • 2 tablespoon sesame seeds
  • 1/2 teaspoon fresh ground pepper
  • 1/8 teaspoon salt

Angel Hair Pasta with Pepper Salad

Ingredients:

  • 1 box angel hair pasta
  • 1 red pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • 1 green pepper, thinly sliced

Dressing:

  • 1/2 cup soy sauce
  • 1/2 cup oil
  • 1/4 cup sugar
  • 1 clove garlic

Asparagus Salad

Ingredients:

  • Heart of palm sliced
  • Blanched asparagus (dropped into boiling water for 3 minutes, put under cold water right away)
  • Cherry tomatoes halved
  • Scallions sliced
  • Avocado in med pieces

Directions:

  • Mix together vinegar, oil, crushed garlic, salt, pepper and Dijon mustard
  • Pour over salad right before serving

Tomato Dip

Ingredients:

  • 4 ripe tomatoes, roughly chopped
  • 1 green pepper, halved and seeded
  • 1/2 cup onion
  • 5 cloves garlic
  • 1/4 cup oil
  • 1/2 tbsp salt
  • pinch red pepper flakes
  • 1 tbsp tomato paste

Directions:

  • Preheat oven to 425
  • Mix all ingredients, besides tomato paste, in pan
  • Roast for 25 minutes or until you see that the vegetables have clearly been roasted well
  • Place in food processor with tomato paste (or use hand held blender), pulse until chunky

Sweet Chili Salad

Ingredients:
  • Lettuce
  • Red pepper
  • yellow / orange pepper
  • Red onion
  • Carrot, peel shavings
  • Mushrooms
  • Green Beens (cooked for 10 minutes and cut in one inch pieces)
Dressing:
  • 1/2 cup sweet chili
  • 1/4 cup vinegar
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 2 tbsps brown sugar
  • 1/2 cup oil
  • 2 tbsps mayonnaise
  • salt

Spinach and Ramen Noodles

Ingredients:

  • 1 1/2 bag spinach
  • 1 red onion
  • 1 box grape tomatoes
  • Toasted sesame seeds
  • Toasted ramen noodles

Dressing:

  • 1/2 cup oil
  • 1/3 cup vinegar
  • 4 tbsp soy sauce
  • 4 tbsp sugar

Cashew Salad

Ingredients:

  • Lettuce
  • Tomatoes
  • Mushrooms
  • Cashews

Dressing:

  • 1 cup vinegar
  • 1 cup oil
  • 1 cup ketchup
  • 1 cup water
  • 1/2 cup sugar
  • 1/2 clove garlic

Manderine Salad

Ingredients:

  • 2 heads lettuce
  • 1 16oz mushrooms
  • 1/2 cup sliced almonds
  • 8 oz manderine oranges sliced
  • red onion

Dressing:

  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1/4 cup sugar
  • 3/4 cup mayonnaise
  • 1/8 cup vinegar
  • garlic powder
  • black pepper

Egg and Avocado Salad

Ingredients:

  • Lettuce
  • Avocado
  • Hearts of palm
  • Boiled eggs
  • Chow mein noodles

Dressing:

  • 1/2 cup mayo
  • 1/2 cup brown sugar
  • 1/2 cup vinegar
  • 1 cup oil
  • 2 tsp mustard
  • salt
  • pepper
