Blueberry Muffins

Ingredients:

  • 1/2 cup butter or 1/2 cup margarine, at room temp
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1/2 cup milk
  • 2 1/2 cups fresh blueberries or 2 1/2 cups frozen blueberries
  • 1 tablespoon granulated sugar, mixed with
  • 1/4 teaspoon ground nutmeg

Directions:

  • Heat oven to 375°.
  • Grease 18 regular-size muffin cups (or 12 large size muffins)
  • In bowl, mix butter until creamy. Add sugar and beat until pale and fluffy
  • Add eggs one at a time, beating after each
  • Beat in vanilla, baking powder and salt
  • With spoon, fold in half of flour then half of milk into batter; repeat
  • Fold in blueberries
  • Spoon into muffin cups and sprinkle mixed sugar and nutmeg onto each muffin
  • Bake 15 to 20 minutes, until golden brown and springy to touch

Honey Apple Cake

Ingredients:

  • 3 1/4 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 2 med apples, peeled and cut in chunks
  • 4 eggs
  • 1 cup sugar
  • 1/2 cup oil
  • 1 cup honey
  • 3/4 cup cold tea
  • 1/4 cup brandy (or orange juice)

Directions:

  • Preheat oven to 325
  • Using food processor
  • Process flour, baking powder, baking soda, cinnamon and ginger for 10 seconds, until blended
  • Process apples until finely minced, 8-10 seconds. Set aside 1 cup firmly packed
  • Process eggs, sugar, oil and honey for 2-3 minutes until light
  • Add dry ingredients, alternately with tea and brandy.  Process with quick pulses, until blended
  • Add apples with quick pulses, just until mixed
  • Bake in bundt pan for 1 hour and 10 min.

Brownie Cake

Ingredients:

  • 1 1/2 cups flour
  • 2 cups sugar
  • 1/2 cup cocoa, overflowing
  • 1 tsp baking powder
  • 1 tsp salt
  • 3/4 cup oil
  • 4 eggs
  • 1 tsp vanilla

Directions:

  • Mix all ingredients well and pour into 9×13 pan
  • Bake at 350 for 25-35 minutes

Chocolate Pudding Cookies

Ingredients:

  • 2 1/4 cups flour
  • 1 tsp baking powder
  • 1 cup margarine, softened
  • 1/4 cup sugar
  • 3/4 cup light brown sugar
  • 1 tsp vanilla extract
  • 1 package instant chocolate pudding
  • 2 eggs
  • 12 oz chocolate chips

Directions:

  • Mix all ingredients well.
  • Bake at 375 for 7-8 minutes, may be soft

Chewy Chocolate Chip Cookies

Ingredients:
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 cup oil
  • 3 eggs
  • 1 1/2 tsp vanilla
  • 1 1/2 tsp baking soda
  • 1 cup mini chocolate chips
  • 2 cups whole wheat flour
  • 1 3/4 cup white flour
Directions:
  • Blend sugars and oil
  • Add eggs, vanilla sugar and baking soda
  • Add chocolate chips
  • Add flours and mix well
  • Drop onto cookie sheet
  • Bake at 350 for 8 minutes (might look slightly undone)
  • Makes about 5 dozen cookies

Honey Cake

Ingredients:

  • 2 cups honey
  • 8 eggs
  • 1 cup oil
  • 4 tsp vanilla sugar
  • 1 cup hot water with 1 tbsp coffe
  • 1 cup cold water
  • 1 tsp baking soda
  • 4 tsp baking powder
  • 1/5 tsp cinnamon
  • 2 cups sugar
  • 5 cups flour

Directions:

  • Preheat oven to 350
  • Mix liquids together
  • Add dry ingredients and mix well
  • Pour into 2 9×13 greased pan
  • Bake for 45 min

Oatmeal Cookies

Ingredients:

  • 1 cup flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup oil
  • 2/3 cup light brown suger
  • 1/3 cup suger
  • 1 egg
  • 1 tbsp vanilla extract
  • 1 1/2 cups rolled oat
  • 1/2 c chocolate chips

Directions:

  • Preheat oven 350
  • Mix flour, baking powder, baking soda, cinnamon and salt together and set aside
  • Beat oil and sugars till fluffy
  • Mix in egg and vanilla
  • Add flour mixture, oats and chocolate chips
  • Bake 12-14 min

Hot Gooey Caramel Pie

Ingredients:

  • 1 cup margarine
  • 8oz Tofutti cream cheese
  • 1.5 cups brown sugar
  • 1/4 cup corn syrup
  • 2 eggs
  • 1 tsp baking soda
  • 2 tsp vanilla extract
  • 1 1/4 cup flour
  • 1 cup caramel chips
  • 2 graham cracker pie crusts

 

Directions:

  • Preheat oven to 350
  • Cream margarine and tofuttie cream cheese at med until smooth
  • Add brown sugar and corn syrup and beat until smooth and creamy
  • Add eggs, baking soda, vanilla, beating to combine after each addition
  • Turn to low and add flour, beat until combined, stir in caramel chips
  • Divide between two pies, bake 30-35 min until center is just set, may still be wiggly
  • Can serve hot with ice cream and caramel sauce

Chocolate Chip Pie

Ingredients:

  • unbaked 9-inch (4-cup volume) deep-dish pie shell *
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup (1 1/2 sticks) butter, softened
  • 1 cup (6 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 1 cup chopped nuts
  • Sweetened whipped cream or ice cream (optional)

 

Directions:

  • PREHEAT oven to 325° F.
  • BEAT eggs in large mixer bowl on high speed until foamy. Beat in flour, granulated sugar and brown sugar. Beat in butter. Stir in morsels and nuts. Spoon into pie shell.
  • BAKE for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on wire rack. Serve warm with whipped cream, if desired.
  • * If using frozen pie shell, use deep-dish style, thawed completely. Bake on baking sheet; increase baking time slightly.

Carrot Cake

Ingredients:

  • 6 eggs, separated
  • 1 cup sugar, divided
  • 1 cup grated carrots
  • 1 tsp lemon juice
  • 1 1/2 cups ground nuts

 

Instructions:

  • Preheat oven to 350°.
  • Beat egg whites with 1/2 cup sugar until stiff.
  • Mix egg yolks with remaining ingredients thoroughly.
  • Fold in whites.
  • Bake in greased tube pan for 35-40 minutes.
  • Invert over bottle to cool.

Yield: 1 round cake
