Meat Ziti

Ingredients:

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 1 green pepper, chopped
  • 14.5 oz can diced tomatoes, undrained
  • 8 oz tomato sauce
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder or 1 sm clove minced
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 oz ziti or elbow macaroni, cooked and drained

Directions:

  • Saute ground beef, onion and green pepper until onion is tender and beef is lightly browned
  • Drain off excess fat and add tomatoes, tomato sauce and spices
  • Stir well
  • Mix with cooked pasta
  • Pour in pan and bake at 350 for 25 to 30 minutes or until hot and bubbly
  • Serves 6

 

Breadcrumbs for Chicken

Ingredients:

  • 2 cups bread crumbs
  • ½ cup flour
  • ¼ stick margarine
  • 1 ½ tbsp sugar
  • 1 ½ tbsp paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • ½ tbsp salt
  • 1 tsp black pepper

Cooked chicken

Curry

Paprika

Salt

Pepper

Garlic powder

Cumin

Directions:

Sautee chicken in a bit of oil with spices until desired texture

Pepper Steak

Ingredients:

  • 3 tablespoons butter or oil
  • 1 1/2 pounds round or flank steak
  • 1 1/2 cups thinly sliced onion
  • 1 cup diced celery
  • 2 cups canned tomatoes, chopped
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon sugar
  • 2 bay leaves
  • 3 large green bell pepper
  • 1 1/2 teaspoons cornstarch
  • 2 teaspoons soy sauce
  • 1/4 cup cold water

Directions:

  • Heat butter over medium high heat and brown meat, which has been cut into 1/4-inch wide strips
  • Remove meat and set aside
  • Reduce heat, saute onions for 5 minutes.
  • Return meat to skillet and add remaining ingredients except peppers, cornstarch, soy sauce and water
  • Add peppers, which have been seeded and cut in 1/2-inch strips, simmer covered for 10 minutes
  • Blend cornstarch, soy sauce and water in small dish; stir into meat mixture. Cook until thick and clear, about 1 minute.

Herbed Pasta-Tuna Bake

Ingredients:

  •  8 oz. (2 c.) macaroni shells, cooked and drained
  •  2 (6 1/2 oz.) cans tuna, drained and chunked
  •  1/2 c. chopped celery
  •  1/2 c. mayonnaise
  •  1/2 c. milk
  •  3 c. loosely packed parsley (1 bunch), thick stems removed
  •  2/3 c. coarsely chopped green onions

Directions:

  • In greased deep 2-quart baking dish toss shells, tuna and celery
  • In blender or food processor process mayonnaise, milk, parsley and green onions until smooth
  • Pour over tuna mixture; toss to coat
  • Bake in preheated 400 degree oven 15 minutes or until bubbly

 

Fish in Tomato Sauce

Ingredients:

  • 1 onion
  • 2 tomatoes
  • 1 red pepper
  • 1 small eggplant
  • 1/2 box mushrooms
  • 1 16 oz. can tomato sauce
  • 2 c. water
  • 1/2 c. sugar
  • oregano and black pepper

 

Directions:

  • Chop all veggies and place on the bottom of the pot with water and spices over it.
  • Bring to a boil.
  • Take fish out of wrapper and place on top of veggies.
  • Cook for 45 minutes, turn fish over and cook for an additional 35-45 minutes.
  • Keep mixing to prevent burning.
  • You can leave out or add any veggies you want – it tastes good with almost everything except zucchini.

Baked Chicken with Honey Soy Sauce

Ingredients:

  • 2 3lb chickens, quartered
  • 1/3 cup honey
  • 3 tbsp mustard
  • 3 tbsp soy sauce

Variation

  • 1 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 3 tsp garlic
  • 2 tbsp digon mustard
  • salt and pepper to taste
  • sesame seeds (to cover chicken after above is poured on)

Directions:

  • Combine all ingredients and brush chicken
  • Bake uncovered for 1 1/4 to 1 1/2 hours

Shnitzel with Italian Dressing

Ingredients:

  • Chicken cutlets
  • Mayonnaise
  • Breadcrumbs
  • Cold cuts ie pastrami
  • Italian Dressing

 

Directions:

  • Cover shnitzel with mayonnaise and dip into breadcrumbs
  • Roll shnitzel with pastrami and place in pan
  • Pour Italian dressing over the whole thing (about 16oz for a 9×13 pan)
  • Bake covered at 350 for a half hour

Baked Chicken Cutlets

Ingredients:

  • 2 T BBQ sauce
  • 1 T teryaki sauce
  • 1 T ketchup
  • 2 T mayo
  • Half tsp garlic pwdr
  • Half cup corn flake crumb
  • Chicken cutlets

Directions:

  • Mix first 5 ingredients
  • Cover cutlets in sauce
  • Dip cutlets in cornflake crumbs
  • Bake till crisp

Pesach Hamburgers

Ingredients:

  • 2 lbs ground meat
  • 2 medium potatoes, peeled and grated
  • 1/2 small onion, peeled and finely diced
  • 2 eggs
  • 2 tsp salt
  • Oil for frying

 

Instructions:

  • Mix first 5 ingredients in a bowl.
  • Form into patties and place in hot oil in 10″ skillet.
  • Fry until crisp on both sides.

Variation: Bake on baking pan at 350° for 20 minutes or until crisp.

Yield: 1 dozen
