Cheese Balls

Ingredients:

  • 8 oz whipped cream cheese
  • 3 cups confectioners’ sugar
  • 12 oz pareve chocolate (melted)
  • 1 1/2 tsp vanilla extract
  • caramelized nuts (as needed)

Directions:

  • Combine ingredients by hand and refrigerate until stiff
  • Work with small amount while keeping the rest refrigerated, roll into balls
  • Roll in caremalized nuts
  • Freeze until serving

Dairy Lokshen Kugel

Ingredients:

  • 10 oz wide noodles, undercooked
  • 8 oz cottage cheese
  • 8 oz sour cream
  • 1/2 cup sugar
  • 2 tsp vanilla sugar
  • 1/2 cup raisins
  • 3 eggs

Directions:

  • Mix all ingredients then add to cooked noodles
  • Pour into lightly greased 9×13 pan
  • Bake at 350 for 45-60 minutes

Polka Dot Cheesecake

Ingredients:

  • 1 chocolate pie crust
  • 16 oz softened cream cheese
  • ½ cup sugar
  • 2 eggs
  • 2 oz dark chocolate, melted
  • 1 tsp vanilla
  • 2/3 cup sour cream

Directions:

  • Preheat oven to 300 degrees F
  • Beat cream cheese until smooth, gradually adding the sugar
  • Scrape down the sides of the bowl
  • Add the eggs one at a time on low speed
  • Add vanilla and sour cream
  • Scrape the sides of the bowl one more time and beat until smooth
  • Reserve 1/2 cup of the cheesecake filling and set aside
  • Melt the 2 oz of dark chocolate and stir into the reserved 1/2 cup of cream cheese filling.
  • Pour the plain batter into the pie crust, smoothing out to the edges
  • Fill a pastry bag,  fitted with a round tip, with the chocolate cheesecake mixture
  • Gently press the tip of the bag into the smoothed out plain cheesecake and squeeze the bag forming a dot
  • Place dots all over the cheesecake until the chocolate mixture is used up.
  • Place in the oven and bake for 1 hour then turn off the oven and leave the cheesecake in the oven for an additional 1 hr
  • Refrigerate for at least 24 hours.   Freeze if you wish for about 1/2 hour before cutting.  Use a knife dipped in hot water to help when cutting.

 

Easy and Light Cheesecake

Ingredients:

  • 2 pie crusts
  • 16 oz cottage cheese
  • 16 oz sour cream
  • 1.5 cups sugar
  • 3 eggs
  • 1/3 cup flour
  • 1 tsp vanilla
Directions:
  • Mix all together or blend with hand blender
  • Pour into pie crust
  • Bake at 350 for 45 min – 1 hr (slight browning on top)
  • Add toppings and then refrigerate

Vegetable Quiche

Ingredients:

  • 2 pie crusts
  • 1 green pepper
  • 1 red pepper
  • 2-8 oz. cans mushrooms
  • 2 med. onions
  • 8 oz shredded cheese
  • 1 C. whipped topping
  • 4 eggs
  • 1 tsp salt

Directions:

  • Dice onions and peppers and saute, adding mushrooms
  • Remove from flame and add whipped topping, eggs and salt
  • Pour half of vegetable mixture into crust, adding 1/2 the grated cheese
  • Pour remaining mixture, sprinkling cheese on top
  • Bake at 350° for 1 hour

Simple Lasagna

Ingredients:

  • 1 box lasagna
  • 1 can thick and rich tomato sauce (if don’t have use regular just add to the spices)
  • 1 1% cottage cheese
  • 1 egg
  • garlic, pepper, salt
  • shredded cheese
  • 1 c water

Directions:

  • Mix cottage cheese with egg and spices
  • Layer: sauce, lasagna, cottage cheese mixture, sauce, lasagna, cottage cheese, sauce lasagna, shredded cheese
  • Pour in water
  • Bake 350 for 1 hour, until noodles are soft

Dairy Pasta Sauce

Ingredients:

  • 1/4 cup milk
  • 3 tbsp flour
  • 1/2 tsp garlic powder or fresh garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups milk

Directions:

  • In a small bowl whisk together first 5 ingredients
  • Pour 1 1/2 C milk in pot, let simmer, slowly add flour mixture until it becomes thick (it will thicken a nice amount)
  • Close heat & you can add cheese now

Festive Cheese Pie

Crust
2 cups cookie crumbs, finely ground
1/2 cup butter or margarine
1/2 tsp grated lemon rind – optional
Combine and press evenly into 9×13 pan.
Filling
15 oz farmer cheese
8 oz cream cheese
3/4 cup sour cream
3/4 cup plain yogurt
1 Tbsp vanilla
6 heaping Tbsp flour
6 eggs, separated
1.5 cups sugar
1/2 package instant vanilla pudding mix
Mix cheeses, sour cream, yogurt & vanilla. Stir in flour and egg yolks. In a separate bowl beat egg whites until stiff, gradually adding sugar. Continue to beat while adding pudding mix. Fold egg whites into cheese mixture and pour over crust. Bake at 350 for 60 min. Turn off oven and leave in cake to cool for 20 minutes.
Topping
1 cup whipping cream
1 cup milk
1/2 package instant vanilla pudding mix
Beat everything until firm but not stiff. Spread over cooled cheese pie. Refrigerate for several hours. The frosting becomes stiff enough to slice.

Cheese Danishes

Ingredients (makes 6 balls, each ball makes ’bout 12 danishes. Dough freezes very well):
  • 10 cups flour
  • 2 cups margarine
  • 1 cup sugar
  • 1 tsp salt
  • 4 packages dry yeast
  • 5 eggs
  • 2 Tbsps vanilla
  • 2 cups water
Filling (enough to fill 50 danishes):
  • 22.5 oz farmer cheese
  • 2 eggs
  • 1.5 cups sugar
  • 1 Tbsp grated lemon rind (I skipped)
  • 1 Tbsp vanilla
  • 1/2 package instant vanilla pudding mix
Directions:
  • Knead all ingredients into an elastic dough. Lightly flour the top, cover with a dishtowel and refrigerate for 5 hours
  • Mix filling ingredients until smooth
  • Divide dough into 6 balls. Roll out each ball on a floured surface, into a 12″ x 12″ square. Cut into 9-12 squares.
  • Fill each square with a heaping teaspoon of filling
  • Fold up like an envelope and pinch the edges to firmly close
  • Use a toothpick in the middle to hold it closed
  • Brush with egg and bake at 375 for 25 min or until it gets lightly brown
  • Once it cools you could sprinkle with icing sugar

Spinach Quiche

Ingredients:

  • 5 eggs
  • Frozen spinach
  • 1 sauteed onion
  • 1/4-1/2 cup shredded cheese
  • 1 tsp milk
  • Salt
  • Pepper
  • Garlic powder
  • Frozen pastry crust

Directions:

  • Mix ingredients and pour into pie crusts
  • Bake at 350 for 35-45 minutes
  • A Bodek big bag makes about 5 or 6 quiches
