Cappuccino Cookies

Ingredients:

  • 1 ½ sticks (¾ cup) butter, softened
  • 6 ounces unwhipped cream cheese
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 Tablespoon instant coffee powder
  • 2 eggs
  • 1 Tablespoon milk
  • 1 teaspoon baking soda
  • 2 ½ cups all-purpose flour
  • 1 ¼ cups cappuccino chips

Directions:

  • Preheat oven to 350. Line 2 cookie sheets with parchment paper and set aside.
  • In the bowl of an electric mixer, cream together the butter and cream cheese until smooth, about a minute. Add the sugar and brown sugar and beat until smooth and creamy.
  • Add the vanilla extract, coffee powder, eggs and milk, beating to combine after each addition.
  • With the mixer on a low speed, add the baking soda and flour. Beat until just combined.
  • Stir in the cappuccino chips. The dough will be a bit sticky.
  • Drop the dough onto the prepared cookie sheets using a medium cookie scoop (or by the heaping tablespoon).
  • Bake at 350 for 10-11 minutes, until the tops are set.
  • Remove from oven and set aside to cool for a minute or two before removing from the tray.

Individual Tiramisu Cups

Ingredients:

  • 4 cups whip
  • 3/4 cup confectioners sugar
  • 8 oz whipped cream cheese at room temperature
  • 2 pckg (7oz each) lady fingers
  • 2 tbsp strong instant coffee dissolved in 1/2 cup hot water
  • 1 tbsp coffee or chocolate liqueur
  • cocoa for dusting

Directions:

  • Beat whip until stiff
  • Add confectioners sugar and mix until incorporated
  • Add cream cheese and mix until smooth
  • Combine dissolved coffee and liqueur
  • Roll lady fingers in coffee mixture, do not soak, middle should be dry
  • Layer cookies in cup, top with whip and sprinkle thin layer of cocoa

 

Easy Cream Cheese Danish

Ingredients

  • 36 mini puff pastry squares (mazor)
  • 8 oz cream cheese; at room temperature
  • ⅓ cup sugar
  • 1 tsp vanilla extract
  • 2 eggs; divided
  • ¼ cup flour; for rolling

Instructions

  • Line a baking sheet with parchment paper. Set aside
  • In a medium bowl, place room temperature cream cheese and sugar. Using a spatula, cream together the cheese and sugar until smooth. Add vanilla and 2 egg yolks and stir until just combined.
  • On a floured surface, unfold 1 sheet of puff pastry. With a floured rolling pin, slightly roll it until it is 10×10-inches. Repeat with second puff pastry sheet.
  • Cut each puff pastry sheet into 4 equal squares. Spoon a heaping tablespoon of cream cheese filling into the center of each square.
  • Brush all 4 edges of each pastry square with an egg white wash (2 egg whites beaten with 1 tablespoon of water). Fold each corner in to be slightly touching the filling. Carefully transfer each pastry to the lined baking sheet.
  • Refrigerate for 15 minutes. Meanwhile, preheat oven to 400 degrees F.
  • Bake for 20 minutes or until golden brown, rotating the pans once halfway through.

Notes

To get your puff pastry to the perfect temperature, pull it out of the freezer and put it into the refrigerator the day before you plan to use it.

Triple Layer ‘Ice Cream’

Ingredients:

  • 6 egg whites
  • 1/2 cup sugar
  • 2 containers whip
  • 3 1/2 oz melted bittersweet dark chocolate
  • 3 1/2 oz melted milk chocolate
  • 3 1/2 oz melted white chocolate
  • Cocoa for garnish

Directions:

  • Whip the egg whites and sugar until stiff
  • Add the whip and continue to mix until thick
  • Divide cream into 3 parts
  • Fold one type of chocolate into each bowl
  • Layer dark chocolate in pan or individual clear cups and freeze for a half hour
  • Pour milk chocolate cream over and freeze until stiff
  • Add white chocolate cream as the top layer and garnish with cocoa
  • Freeze until 15 minutes before ready to serve

Rocky Road Cheesecake

Ingredients:

  • 3 squares semi sweet baking chocolate
  • 16 oz cream cheese, softened
  • 1/3 cup sugar
  • 1/4 cup milk
  • 2 cups whipped topping
  • 3/4 cup mini marshmallows
  • 1/3 cup chopped cocktail peanuts
  • 1 chocolate pie crust

Directions:

  • In double boiler, melt 1 square chocolate, set aside
  • In bowl, beat cream cheese, sugar and milk on medium until well blended
  • Add melted chocolate, mix well
  • Gently stir in whipped topping (already whipped), marshmallows and peanuts
  • Coarsely chop remaining chocolate and stir into cream cheese
  • Spoon into crust
  • Refrigerate for 4 hours or until set

Easy Cheesecake

Ingredients:

  • 1 graham cracker pie crust
  • 8 oz. soft cream cheese
  • 1/3 cup sugar
  • 2 teaspoons. vanilla
  • 1 cup sour cream
  • 8 oz. Cool Whip, slightly thawed

Directions:

  • Beat cream cheese until smooth, add sugar and mix well
  • Add sour cream and vanilla, mix well
  • Fold in Cool Whip
  • Spoon into pie crust
  • Chill for 4 hours

Brownie Cheese Cake

Ingredients:

1 pckg brownie mix

8 oz cream cheese

1/3 cup sugar

1/2 tsp vanilla

1 egg

Directions:

Prepare brownie mix as directed and pour in 9×13 pan

Mix cream cheese, sugar and vanilla until well blended

Add egg and mix

Pour over brownie mixture

Cut through with knife for marble effect

Bake at 350 for 35-40 min, until cream cheese is lightly browned

Peanut Butter Cheese Pie

Ingredients:

  • 1 cup peanut butter
  • 8 oz cream cheese
  • 1/2 cup sugar
  • 12 oz frozen whip
  • 1 chocolate pie crust
  • 12 oz hot fudge ice cream topping

Directions:

  • Beat peanut butter, cream cheese and sugar on medium until well combined
  • Gradually mix in 3 cups whipped topping until thoroughly combined
  • Spoon into pie crust, smooth to edges
  • Spread topping over pie
  • Refridgerate until set
  • Spread remaining whip on top, being careful not to mix layers
  • Can drizzle peanut butter and chocolate on top

Greek Salad

Ingredients:

  • 1 large cucumber
  • 2 plum tomatoes
  • 5 oz jar olives
  • 4 oz feta cheese
  • 1 red onion
  • 10 oz romaine lettuce
  • 10 oz baby greens

Dressing:

  • 6 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp dijon mustard
  • 1 tsp lemon juice
  • 1 1/5 cups red wine vinegar

Blintzes

Ingredients:

  • 12 eggs
  • 1 vanilla sugar
  • dash of baking soda
  • 4 tbsp sugar
  • 3 cups flour
  • 1 cup milk or water
  • pinch of salt

Directions:

  • Combine all ingredients besides milk
  • Gradually add milk and mix until smooth
  • Heat oil in frying pan
  • Pour 2 tbsp of batter into pan
  • Fry on one side until golden colored.
  • Makes about 40

 

FILLING: (enough for 60)

  • 3 lbs. farmer cheese
  • 1 non-instant vanilla pudding
  • 8 oz cream cheese
  • 4 eggs
  • 1 1/2 cups sugar
  • dash salt
  • 1 vanilla sugar
