Roasted Vegetables

Ingredients:

  • Butternut Squash
  • Sweet Potato
  • Carrot
  • Turnip
  • Parsnip
  • Beet
  • Red onion
  • Salt
  • Pepper
  • Garlic powder
  • Basil

Directions:

  • Mix all ingredients together
  • Spread on cookie sheet, lined with parchment paper
  • Spray pam on top
  • Bake on 350 for 45 minutes

Cream Cheese Frosting

Ingredients:

1 stick margarine

8 oz cream cheese

1 tsp vanilla

3/4 cup confectioners sugar

Milk or coffee rich

Directions:

Beat together all ingredients, aside for the milk or coffee rich

Add milk or coffee rich 1 tbsp at a time, until the correct consistency is reached

 

Egg Rolls

Ingredients:

  • Onions
  • White shredded cabbage
  • Shredded carrots
  • Shredded chicken
  • Garlic
  • Black pepper
  • Salt
  • Egg roll wraps

Directions:

  • Sautee onions with cabbage, carrots and chicken
  • Season with spices
  • Place heaping tablespoon of mixture on lower part of egg roll wraps
  • Fold two sides then roll to cover mixture
  • Seal edges with corn flour paste (corn flour with water)
  • Fry each side until golden

Asian Cabbage Salad

Ingredients:

  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 15 grape tomatoes, halved
  • 1 15oz can hearts of palm drained and sliced
  • 1 15oz baby corn drained and sliced
  • 1 8oz can water chestnuts drained and sliced

Dressing:

  • 1/3 cup teriyaki sauce
  • 1/3 cup oil
  • 1 tbsp toasted sesame oil
  • 2 tbsp sesame seeds
  • 2 frozen cubes crushed garlic
  • 1 tsp honey
  • 1 tsp ginger

Serve at room temperature or chill for 30 minutes

Corn Salad

Ingredients:

  • 2 ears corn
  • 1 avocado
  • 1 pint grape tomatoes

Dressing:

  • Juice of 1 lime
  • 3 tbsp oil
  • 1 tbsp honey
  • 1 garlic clove minced
  • dash cayenne
  • salt and pepper to taste

Peanut Butter Pound Cake

Ingredients:

  • 2/3 cups creamy peanut butter
  • 2 cups sugar
  • 2 2/3 cups flour
  • 1 cup coffee creamer
  • 1 1/2 tbsp baking powder
  • 1/3 cup water
  • 1 1/2 tsp vanilla sugar
  • 4 eggs
  • 1 1/3 (3.5oz) package instant vanilla pudding
  • 12 oz mini chocolate chips

Glaze:

  • 1/4 cup creamy peanut butter
  • 1 cup semisweet chocolate
  • 1/2 cup peanut brittle crunch

Directions:

  • Preheat oven to 350
  • Grease and lightly flour a bundt pan
  • Beat peanut butter and sugar until creamy
  • Add the rest of ingredients, nesides chocolate chips, mixing between each addition
  • Mix well and stir in mini chocolate chips
  • Pour into pan, bake for 55-60 min until a toothpick inserted near the center comes out clean
  • Allow cake to cool in pan for 10 minutes then invert onto a wire rack and cool completely
  • To prepare glaze, heat peanut butter and chocolate over low heat, stirring constantly until smooth and runny
  • Drizzle warm glaze over cooled cake
  • Sprinkle with crunch while still wet

Granola Bars

Ingredients:

  • 4 cups oats
  • 4 cups rice crispies
  • 1 cup honey
  • 1/2 cup brown sugar
  • 1/2 cup oil
  • 1 tsp baking soda
  • 1 bag chocolate chips

Directions:

  • Mix all ingredients
  • Spread onto cookie sheet
  • Bake at 350 for 18 minutes
  • cut while hot

Chani Druk Chocolate Cake

Ingredients:

  • 3 cups flour
  • 3/4 cup cocoa
  • 2 1/4 cup sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 3 eggs
  • 3/4 cup oil
  • 1 tsp vanilla extract
  • 1 cup water
  • 1 cup soy milk

Directions:

  • Mix dry ingredients together
  • Add liquid
  • Mix until smooth
  • Bake at 350 for 45 minutes, do not overbake

Cinnamon Buns

Ingredients:

  • 2 tbsp yeast dissolved in 1 cup warm water
  • 8 cups flour
  • 1 cup sugar
  • 1 cup oil
  • 2 eggs
  • pinch salt
  • 1 cup orange juice

Filling:

  • oil
  • 3/4 cup brown sugar
  • 1 cup sugar
  • 1 tbsp cinnamon
  • 1 tbsp vanilla sugar

Glaze:

  • 4 tbsp margarine
  • 2 cups confectioners sugar
  • 1 tsp vanilla extract
  • 3-6 tbsp hot water – add one at a time until right consistency

Directions:

  • Mix dough ingredients and let rise
  • Divide in two and roll into rectangles
  • Spread oil and filling ingredients
  • Bake at 350 15-18 minutes
  • Pour glaze over slightly warmed buns

Chocolate Date Cake

Ingredients:

  • 1 cup chopped dates
  • 1 cup hot water
  • 1 tsp baking soda
  • 1 cup sugar
  • ½ cup shortening
  • ½ tsp salt
  • 1 tsp vanilla
  • 1 ¾ cup flour
  • ½ tsp baking soda
  • 2 tsp cocoa
  • 1 well beaten egg
  • 1 cup chocolate chips
  • ½ cup chopped nuts (optional)

Directions:

  • Mix together dates, hot water and baking soda.  Let cool
  • Cream sugar, shortening, salt and vanilla
  • Add date mixture, flour, baking soda, cocoa and egg
  • Place in greased 9×13 pan
  • Top with chocolate chips and chopped nuts
  • Bake at 350 for 35-40 minutes.
